Kim’s vegan bakes – raspberry and white chocolate cupcake

This weekend there was a surprise vegan market along my local high street. I say surprise because there was zero advertising for it. There is usually a little row of market stalls along the high street every day, but suddenly all of the usual signs were replaced with vegan shops and local businesses. I therefore had to stop and have a look at all of the goodies that were on offer.

These cupcakes managed to catch my attention immediately. Mainly because not only were the cupcakes huge but there were at least 12 different varieties to choose from, plus a selection of cookies and brownies too. I had a chat with the young man who was running the stall who told me that this was a small business called Kim’s Vegan Cakes, that was located in Hemel Hempstead, in Hertfordshire, which is roughly around a 30 minute drive from where I live. Truly a local business.

Each cupcake was on sale for £3.25, or we could get a box of 4 for £12. So naturally I went for the box of 4 because how could I pick only one? All of the cupcakes looked delicious and there were some really exciting flavours on offer that I have not seen offered before by any big chain companies, nor even by some other smaller bakers. They were very creative, including raspberry and coconut, biscoff, oreo, cherry and almond and banoffee. They also looked lovely with each having its own special icing top to show the flavour.

I had to try the raspberry and white chocolate cupcake first though and goodness me was it a treat. The cupcake itself was light and fluffy, and the icing on top was sweet without being sickly. But the stand out was the raspberries. They were sharp and tangy and really did wake me up with their tartness, but when paired with the subtle sweetness of the white chocolate icing, it blended together wonderfully. The chocolate took off a lot of the sharpness of the raspberry, whilst the tartness of the raspberry balanced the sweetness of the chocolate. Despite the size too – this was more on par with a muffin than a cupcake I would say – the cupcake was incredibly light. It didn’t have any of that stodginess that some cupcakes can have and I honestly could have eaten another one if I’d been given half the chance.

My only thing to warn you of is that the cupcake was a tiny bit crumbly, so just make sure you have a plate or a napkin to hand because the crumbs did get a bit messy. But that’s literally the only issue with them and I don’t even think it’s an issue…all cupcakes are crumbly. I really cannot find any reason to fault this cupcake. Plus, it even went down splendidly with a big cup of tea so that’s really all it takes to make me a happy camper.

For £3.25 a cupcake I think that is perfect value for money. It is bigger than your usual cupcake, but still light and manages to satisfy that sweet tooth craving without being sickly sweet or overpowering. Next time I have any sort of get together – or quite frankly any time I want a sweet treat – I will absolutely be ordering from Kim’s Vegan Cakes. They do have a website which you can find here and it seems that they travel around the Hertfordshire and Bedfordshire areas quit regularly to attend various markets and events. If you do come across them I would highly recommend trying them. I am now tempted to see if I can pick up some of those tray bake goodies next time…
